Ingredients for the Mango Sticky Rice Recipe

For the Sticky Rice:

  • 1 cup Thai glutinous rice
  • 1¼ cups water 

For the Sweetened Coconut Milk:

  • 1 cup coconut milk
  • ½ cup sugar
  • ¼ teaspoon salt

For the Coconut Sauce Topping:

  • ½ cup coconut milk
  • 1 tablespoon sugar
  • ⅛ teaspoon salt
  • ½ teaspoon rice flour or cornstarch 

To Serve:

  • 2 ripe mangoes, peeled and sliced
  • 1 tablespoon toasted mung beans for garnishing

Mango Sticky Rice Recipe

  • Prepare the Sticky Rice:

    • Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 3 hours or overnight.
    • After soaking, drain the rice and place it in a steamer lined with cheesecloth or a clean kitchen towel. Steam over boiling water for about 20–25 minutes, or until the rice becomes tender and translucent.
  • Make the Sweetened Coconut Milk for the rice:

    • In a saucepan, combine 1 cup of coconut milk, ½ cup of sugar, and ¼ teaspoon of salt. Cook over medium heat, stirring until the sugar dissolves. Do not let it boil.
    • Once the rice is cooked, transfer it to a bowl and gradually pour the sweetened coconut milk over it, stirring gently to combine. Cover and let it sit for about 20–30 minutes to allow the rice to absorb the coconut milk fully.
  • Prepare the Coconut Sauce Topping:

    • In a separate saucepan, mix ½ cup of coconut milk with 1 tablespoon of sugar and ⅛ teaspoon of salt. Heat over medium heat until warm.
    • In a small bowl, dissolve ½ teaspoon of rice flour or cornstarch in a tablespoon of water to create a slurry. Slowly whisk this slurry into the warm coconut milk mixture, stirring continuously until it thickens slightly. Remove from heat and let it cool.
  • Assemble the Dessert:

    • Place a portion of the coconut-infused sticky rice on a serving plate. Arrange slices of ripe mango beside the rice.
    • Drizzle the coconut sauce topping over the sticky rice.
    • Sprinkle toasted mung beans or sesame seeds on top for added texture and flavor, if desired.
